Mango BBQ Sauce 9-15-14

It's mango season!

We have a huge tree in the yard and we are overrun with mango. What's a girl to do? Make "Mango BBQ sauce" of course!!

Make sure you use ripe mango for this. I used two really ripe mangoes for this bottle.

I don't really do amounts when I'm cooking. Cooking is about tasting as you go and finding balance in your creations. That being said, I will try my best to give amounts, but you should really be tasting as you go and find the balance for yourself.

Mango BBQ sauce

2 Tbsp vegetable oil

1 tsp cumin seeds

1 tsp fennel seeds

1 clove garlic, minced

2 thumbs ginger peeled and minced

1 small onion, finely minced

Hot pepper, minced (use to your palate)

2 mangos, peeled and chopped.

Juice of 2 limes

1 Tbsp apple cider vinegar

1 Tbsp Worcestershire sauce

2 Tbsp molasses

salt & black pepper

Sweetener to taste

Heat vegetable oil and add cumin seeds and fennel seeds. The seeds will pop in the oil. Please be careful. Don't burn. When it is done popping, add onion, ginger, garlic and hot pepper. Cook down to translucent. Do not brown the onions. Add mango and lime juice. Cook down. Add water a little at a time if it reduces too much to extend cooking time without burning it. Add the rest of the ingredients. Taste it. IF needed, add sweetener to balance the flavor.
